Classic Baked beans

I'm not sure where I got this but it sure is good!!!

3 slices nitrate-free bacon roughly chopped
1 TBS EVO
1 large organic onion -- chopped
1-2 TBS tomato paste
1/2 cup palm sugar
1 TBS molasses (or maple sugar)
1/2 -1 tsp chile powder
1 tsp dry mustard (can use prepared if necessary)
1 TBS apple cider vinegar
3 can white beans (usually navy or 6 cups prepared)
1-1 1/2 cups chicken broth (more if needed)
salt and pepper to taste

cook bacon in oven safe skillet over med until it releases it's fat add olive oil and onions (cook until transparent) stir in paste sugar molasses, Chile powder, mustard and vinegar cook for one min add beans broth salt and pepper bring to boil.

Now we usually just eat them at this point but if you want to bake it-- cover the skillet bake for 1 hour. Check beans add more broth if needed to moisten beans and continue to bake uncovered until top is browned and bubble, about 30 more minutes serve hot!

homemade enchalida sauce!

So, my DD begged me to make Enchilada's today. We had left over chicken from some chicken burritos that I made last night. So I've been dying to try my hand at this 10 minute enchilada sauce recipe from Allrecipe.com not one to leave any recipe alone I changed it up a little....

Ingredients

  • 1/4 cup coconut oil
  • 2 tablespoons self-rising flour
  • 1/4 cup New Mexico or California chili powder
  • 1 (8 ounce) can tomato sauce
  • 1 1/2 cups water
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tsp cocoa powder
  • 1 tsp salt
DIRECTIONS

Heat oil, flour, and chili powder in sauce pan on med. Let boil for a min. slowly (and carefully) add in the rest of the ingredients. bring to a boil and then turn down and simmer for 10 min or until slightly thick.

This turned out SUPER yummy with a slight bite of spice. My youngest that usually doesn't like anything even slightly spicy devoured her chicken enchilada and all the leftovers she could get her hands on!!

Homemade granola! YUMMY!!

I got this from another's blog and it was a great addition to my kids lunches this week! It made the house smell supper good! My daughter said it was the best and my supper picky husband ate so much of it I have to make up another batch for the rest of the week!!

4 cups rolled oats
1/2 cup melted coconut oil
6 Tbs melted butter
1 1/4 cup Kefir or cultured buttermilk

1/2 cup honey
1/2 cup maple syrup
1 tsp sea salt
4 tbs cinnamon
4 tsp vanilla extract

1/2 cup dried shredded coconut
1/2 cup raisins
1/4 cup sunflower seeds ((or chopped pumpkin, almonds, walnuts or whatever:) ))
1 apple seeded and shredded with skin on

Directions:
mix oats with melted butter and oil, kefir in a large bowl. Cover with a cloth and allow to sit for 10-24 hours (or over night). After soaking time, preheat oven to 200 degrees

Place honey, maple syrup, cinnamon and vanilla in either a glass up in a small pot of warm water on the stove (i just used a double broiler) over med until the honey becomes thin (this doesn't take long)

combine honey oats mix to incorporate. then add the extra ingredients. spray a jelly roll or cookie sheet with a non-stick spray (or butter if you prefer) Pop in oven for 4 to 5 hours allow to cool it will get crisper as it cools.

Now the original recipes says to add the coconut, raisins, fruit, seeds and nuts at the end but we liked having the honey mixture on our stuff. My husband especially loved the raisins because he ate them all! Had to add extra seeds and nuts today just so that there was enough for the kidos for lunch!!! *We even added some carob chocolate chips today just for the fun of it! :)

Homemade Worcestershire Sauce Recipe

Ok! So in my hunt for everything sugar free I couldn't find a Worcestershire sauce that all my friends and loved ones could use. The one that I could use for one- sugar-free, I can't use for another- gluten free. I kinda wanted one that was free of MSG as well. Now things were getting tricky! I needed a Gluten free, sugar-free, and MSG free Worcestershire sauce! After tons of searching on the web this recipe looks like the main one that everyone kept using. So to make it sugar free and Gluten free, and MSG free I came up with my own version!

Homemade Worcestershire Sauce
2/3 Cup Cider Vinegar
2 2/3 San-J Organic Tamari soy sauce (both GF, and MSG free)
2 2/3 Tbs water
1 1/3 Pure maple syrup
1/3 tsp ground ginger
1/3 tsp dry mustard
1/3 tsp onion powder
1/3 tsp garlic powder
1/6 tsp cinnamon (or a pinch)
1/6 tsp black pepper(or a pinch)

combine all ingredients in a pan. Bring it to a boil. Let it boil for 1 min. Allow to cool and store in refrigerator.

When I made this I did this recipe and 1/3 more. I got rid of an old bottle of Soy sauce that I can't use anyway. It made a perfect amount! can't wait to try it on a few more things- like chex mix! OOOHH the possibilities!

Mostly Sugar-free Spicy Barbecue Sauce--Gluten Free too!


K, Now I have been on a hunt for quite awhile for a good Barbecue sauce. Don't know if you've tried to find one in the store. I've tried a few with less then favorable results! I decided that it was time to quite looking for a "short cut" and go for gold. On the first try I struck gold!! This is a recipe that I've adapted from a book called 500 Low Carb-recipes by Dana Carpender that my mom had (Who got it from a dumpster diving friend!). Never one to leave a recipe alone I took out the molasses (to lower the GI) and the Splenda(YUCK-O). I think this one is smokin'! ********pictured is BBQ chicken, baked potato and dinner roll

Spicy Barbecue Sauce
1 tsp chopped garlic
1 small onion finely minced
3 Tbs coconut oil (but you can use butter if need be)
4 tbs palm sugar
1 tsp salt
1 tsp dry mustard
1 tsp paprika
1 tsp chili powder
1/2 tsp black pepper
1 Tbs maple syrup
1 1/2 cups water
1/4 cup cider vinegar
1 Tbs *Worcestershire sauce (I use Frenches)
1 Tbs prepared horseradish
1 can tomato paste
1 Tbs Liquid Smoke

In a saucepan, cook the garlic and onion in oil for a few min.
Stir in the palm sugar, salt, mustard, paprika, chili powder, and pepper. Add in the water vinegar, Worcestershire sauce, and horseradish, and stir to combine. Let simmer for 15-20 min.
Wisk in the tomato paste and Liquid Smoke, and let the sauce simmer another 5-10 min.
Let the mixture cool. Transfer it to a jar with a tight-fitting lid, and store in the refrigerated until ready to use---or in our case until the chicken is ready!!!

*Now I know that the Worcestershire sauce has a little sugar listed in the ingredient; No High Fructose Corn Syrup though. If there is anyone out there that knows of Worcestershire sauce that has NO sugar please let me know or even if they know of a sauce substitute that is a good alternative to Worcestershire I'd LOVE to know!!

(note: I made this without the Worcestershire sauce and it still tastes good... it's just got a fuller taste with it)

A Breakfast EVERYONE'S happy with!


I found this recipe on another blog! I omitted the Guava and added a bit more honey but it's diffently a keeper! I wasn't so sure on the soaking grains thing in kefir but it made it so yum! All 6 kids can't wait for more! I will have to wait to see what the hub's thinks, but have a feeling that it will be a hit. The only thing I might change next time is I might add in another banana and maybe I'll try walnuts next time.




Honey Banana Bread
  • 3 cups whole wheat flour
  • 2 cups buttermilk, kefir or yogurt (or water with 2 Tbsp. acid medium)
Mix flour and cultured dairy throughly. Soak in a warm place for 12-24 hours. The bread will rise better if soaked for 24 hours.

  • 3 eggs, lightly beaten
  • 1 tsp. sea salt
  • 1/3 cup honey (you can up this to 1/2 cup if you want it sweeter)
  • 2 tsp. baking soda
  • 1/4 cup coconut oil
  • 2 very ripe bananas, mashed
  • 1 Tbs. cinnamon
Mix in remaining ingredients. Pour into a well-greased and floured loaf glass pan. Bake at 350 degrees for about 1 1/2 hours or till a toothpick comes out clean. (mine must run hot cuz it was done in an hour 10 min
